Mexican cuisine is a real cosmopolitan mix! Heir to European cuisine, especially that of Spain, we find contributions from African, Caribbean, Asian, Middle Eastern and even Pre-Columbian cuisine. It is based on a few fundamentals: the use of corn in all its forms, joined by peppers, coriander, cumin, avocado & corn.

The peppers (cayenne, chipotle, paprika, jalapeños) that are present in all dishes are important:

They make you sweat, eliminate toxins, burn fat and repel mosquitoes.

In addition, the peppers contain vitamins A and C.

Ingredients

Cumin : analgesic, anti-inflammatory, antispasmodic and antipyretic. It is used to relieve difficult digestion, stomach pain, spasms and menstrual pain, gastritis, rheumatic inflammation, hepatitis and fevers.

Coriander : wonderful herb in cooking, but also rich in health benefits: rich in antioxidants (phenolic acids and flavonoids), vitamin K & it has digestive properties. It apparently helps to reduce fermentation linked to digestion (by absorbing gases), which at the same time helps against migraines. It is even said that it could contribute to having a preventive effect against the appearance of polyps, diverticula and others, in the intestines.

Avocado

The corn : Over 5,000 years ago the Aztecs and Mayans cultivated it fervently. Today, corn is once again a treat for young and old. Beyond its inimitable taste, this ear in the color of the sun is one of our best health ally! An energy cocktail, it contains 3 times more vitamin B than most fresh vegetables! It is also known for its high intake of vitamin A, stimulator of the immune system and perfector of skin, eyesight and gums. Rich in potassium, corn promotes the elimination of toxins. In the fight against stones, gout, colic or cystitis, nothing compares! It is rich in antioxidants. No wonder that its consumption reduces the risk of cardiovascular disease or certain types of diseases related to aging such as rheumatism and osteoarthritis. It contains a large amount of unsaturated fatty acids (polyunsaturated and monounsaturated) which reduce bad "LDL" cholesterol!
Rich in lutein and zeaxanthin, two powerful antioxidants in the carotenoid family, corn protects both the retina from free radicals and prevents macular degeneration. And last good news, it is gluten free!

Avocado : this fruit native to Mexico, is rather rich in fat, but it has many benefits for our health. An avocado contains on average 7% fiber, which facilitates intestinal transit! It contains phytosterols which reduce LDL, called bad cholesterol and oleic acid which increases good cholesterol, HDL! It contains unsaturated fatty acids , which are excellent for the cardiovascular system. It also contains carotenoids, in this case, lutein to help eyesight. It contains many vitamins, including vitamins C and E. The vitamin K that avocado contains has a positive impact on blood sugar (recommended for diabetics) Avocado also contains magnesium and potassium, in addition to the other vitamins. And these antioxidant virtues of avocado are indicated to contain or reduce inflammation, especially of the endometrium, during menstruation.
